Ingredients

    2 boneless, skinless chicken breasts, cubed
    1 tbsp peanut oil
    2 tbsp low sodium soy sauce
    2 tbsp orange juice
    1/4 tsp red chili pepper flakes
    2 tbsp chopped fresh ginger
    1/2 onion, chopped
    1 clove garlic, minced
    1 mango, peeled and diced
    1/4 cup slivered, blanched almonds

Directions

Put the chicken breast into a ziploc bag. In a small bowl, mix together the peanut oil, soy sauce, orange juice and chili pepper flakes. Pour into the ziploc bag over the chicken. Add the chopped fresh ginger root. Seal the bag and coat the chicken well, set aside.

Heat a skillet over medium heat and add the slivered almonds. Toast until golden brown. These burn easily, so watch them closely. Once toasted, remove from heat and set aside.

Coat a skillet with nonstick cooking spray and heat over medium heat. Add the onion and garlic and cook until the onion is translucent. Add the chicken with all of the sauce and cook until the chicken is cooked through. Add the mango and cook for just 2 minutes more until the mango is slightly soft.

I recommend serving this on a bed of my Coconut Cilantro Rice. Sprinkle the toasted almonds over the top. Makes 2 servings.
