Ingredients

    1/2 cup brown rice
    1 cup light coconut milk
    1 small bunch of fresh cilantro, chopped (abt 3 tbsp)

Directions

In a medium saucepan, bring the coconut milk to a boil. Stir in the rice, cover, and simmer for 35-40 minutes or until rice is cooked and liquid is absorbed. Remove from heat and stir in the fresh chopped cilantro. Makes 2 servings.

This goes great with my Ginger Mango Chicken!
