Stuffed Mushrooms

Number of Servings: 16

Ingredients

    1/4 cup Extra Virgin Olive Oil
    1 small white onion, finely diced
    4 cloves garlic, diced
    16 large mushroom, stems removed and diced
    2 cups bread crumbs
    1/4 cup fresh parsley, chopped
    Dash of Tabasco
    4 ounces of Gorgonzola crumbles

Directions

Preheat grill. Heat oil in medium saucepan over medium high heat. Add onions and garlic and cook until soft. Remove stems and chop finely, add to saucepan and cook until olden brown. Remove from heat and mix in bread crumbs, parsley, hot pepper sauce and cheese. Mix until well combined, if mixture looks too dry, add more olive oil. Season with salt and pepper to taste. Fill the mushroom caps with the mixture and brush with more olive oil. Grill over medium heat until tender.
