Cinnamon Oatmeal Pancakes

Introduction

Ingredients

    1/2 cup Quick Oatmeal
    3 oz Fat Free Cream Cheese
    3 Egg Whites
    1/3 cup Plain Light Soy Milk
    1 tsp Vanilla Extract
    1 tsp Ground Cinnamon
    2 T Canola Oil
    1 T Splenda (Sucralose sweetener)
    Top with Sugar Free Jam, Jelly, or Syrup

Directions

Put the oatmeal in a blender on high until reduced to a coarse flour. Put in a separate bowl. Whip the egg whites in the blender on med high while softening the cream cheese. Blend in the cream cheese once it is soft and can be stirred. Add the Vanilla, Cinnamon, Oil, Splenda and Soy Milk. Spoon in the oatmeal flour until mixed. Soon approx 2 heaping Tbsp per pancake onto heated griddle (about 275). Brown lightly on both sides (pancakes will be thin - can add baking soda if you want fluffier pancakes). Makes about eight 3 1/2" pancakes.
