Rodger's Red Beans & Brown Rice

Introduction

I think this is pretty tasty, not to hard to make. Number of Servings: 2

Ingredients

    Beans, red kidney, 1 cup
    Onions, raw, .5 cup, chopped
    Olive Oil, 1 tbsp
    Garlic, 3 cloves
    Thyme, ground, 1 tsp
    Oregano, ground, 1 tsp
    Chili powder, 1 tbsp
    Tabasco Sauce, 3 tsp
    Uncle Ben's Instant Whole Grain Brown Rice, 1.5 cup (cooked)

Directions

Soak beans overnight in water enough to cover.
Drain and rinse beans.
Saute onions in olive oil until tender. Add garlic and stir for 2 minutes. Add beans and enough water to cover 3 inches above beans, add spices (spice amounts are to your desired tastes, use as much or as little as you like).
Bring to boil, reduce to a simmer until they are tender and starting to break apart. When they are done test the flavor, add more spices if you feel more are needed, add salt to taste.

Take half of beans and place over 3/4 cup cooked brown rice ( prepare before beans are done as instructed on package ).
