Shirred Eggs & Toast

Introduction

These baked eggs are a yummy change! Serves one, but you can serve up to 6 using one muffin tin. These baked eggs are a yummy change! Serves one, but you can serve up to 6 using one muffin tin.
Number of Servings: 1

Ingredients

    2 large eggs
    1 slice Earth Grains Honey Whole Wheat-Berry bread
    2 t. parmesan cheese

Directions

Heat oven to 350

Spray 2 cells of a muffin tin with spray oil. Crack an egg into each one and bake for 15 minutes.

Check to see that the egg is done to your liking, then sprinkle each egg with 1t of parmesan cheese and place back in the oven for 2 minutes.

Serve over or with toasted bread. If you place them on the toast, you can usually forgo any butter, because the toast becomes nice and soft with the egg.

For more flavor, consider sprinkling with salt & pepper, garlic or onion powder, or fresh chopped rosemary, parsley or thyme along with the cheese.
