Chicken and Cashew Bake

Introduction

Excellent casserole! Can be prepared ahead of time and refrigerated until ready to bake. Remember to put the topping on for just the last 5 minutes of baking.
This may be served alone or over brown rice. Use soy sauce to taste if you wish.

Ingredients

    1 cup sliced ordiced celery
    1/4 cup chopped onion
    2 tbsp butter or margarine of your choice
    3 cups cooked cubed chicken
    1/4 cups chopped cashews
    1/4 cup chicken broth
    1 can (10.5 oz) Cream of Chicken Soup
    1 1/2 cups frozen peas
    1 small jar (2 oz.) of pimentos

    Topping:
    1/4 cup whole, half, or chopped cashews (your preference)
    1/2 cup chow mein noodles


Directions

Makes 8 servings, 3/4 to 1 cup each.
Heat oven to 350 degrees
In a large saucepan, saute celery and onion in butter/margarine until beginning to soften.
Stir in the remaining ingredients reserving the topping stuff.
Pour into an ungreased 1.5 or 2 qt baking dish. Bake at 350 degrees for 25-30 minutes. Sprinkle with 1/4 cup of cashews and chow mein noodles and bake for 5 more minutes.

We make soy sauce available for those who wish to use it. This dish is good on its own or with brown rice and we serve it with a tossed salad on the side.
