Quinoa Waldorf Salad

Ingredients

    Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 0.25 cup (remove)
    Apples, fresh, 1 large (3-1/4" dia) (approx 2 per lb (remove)
    *Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 0.5 cup (remove)
    Lemon juice, 1 tbsp (remove)
    Celery, raw, 1 cup, diced (remove)
    Grapes, 1 cup (remove)
    Fage - 0%, 6 oz (remove)
    *mint leaf - 2 leaves, 3 serving (remove)
    Walnuts, 1 oz (14 halves) (remove)
    Pepper, black, 1 dash (remove)

Directions

INSTRUCTIONS:
1.Place bulgur in a large bowl. Add apple and lemon juice and stir to combine. Add celery, grapes, yogurt and mint, mixing thoroughly. Season with pepper.
2.Cover and refrigerate for a minimum of 1 hour or overnight to allow flavors to meld. To serve, sprinkle each serving with 1/2 tbsp walnuts.
