French Onion Soup

Introduction

Easy French onion soup recipe, modified from a recipe found in the Food Network's 50 Easy Soups article.

Makes 2 large servings or 4 regular servings. Calories are calculated for 4 regular servings.

Ingredients

    Butter, unsalted, 2 tbsp
    Onions, raw, 4 large
    Beef broth, bouillon, consomme, (32oz)
    Thyme, ground, 1 tsp

    Make and Gruyere cheese toast separately and put on top of soup when finished. (Calories for the toast are not included in this recipe.)

Tips

You can omit Thyme if you don't have any on hand, though it does add a nice dimension to the soup to have it.

If you can't find Gruyere cheese for your toast, you can substitute any brand of generic Swiss cheese.


Directions

Cook sliced onions and 1 tsp thyme in butter, covered, 20 minutes. Uncover; cook 1 hour, or until caramelized, stirring occasionally. Add 32 oz beef broth; simmer 10 minutes. Add salt and pepper to taste. Top with Gruyère cheese toast (not included in calories).
