Crock Pot Pico chicken

Introduction

Slow cooker delight: Cube around 2 pounds of chicken, add a jar of pico de gallo, chunked mushrooms and green peppers. Cook on high for one hour, reduce cooker to low heat and cook for 4-6 hours. Add one can black beans, return temp to high for 30 minutes. Serve over Rice, quinoa, couscous. Ingredients

    2 pounds chicken breast, cubes
    1 jar Costco Rojo Pico De Gallo
    2 cup sliced mushrooms (you might saute them in a little olive oil first, would help the flavor)
    2 cups assorted chunked bell peppers.
    1 can red kidney beans

Directions

Put the first four ingredients in a slow cooker, ccok for one hour on high, reduce temp to low, continue to cook for 4-6 hours (may all be done at low). Add kidney beans, turn heat to high for 1/2 hour. Enjoy.
