Turkey Lasagna - no boil

Introduction

An easy, protein packed lasagna! No need to boil the lasagna noodles. Some italian turkey is used for flavor, and some tofu for an extra protein punch! An easy, protein packed lasagna! Number of Servings: 8

Ingredients

    Sauce:
    10 oz (half pkg) Jeanie-O Italian Ground Turkey
    1 onion, chopped
    1 bell pepper, chopped
    1 zucchini, chopped (shred like cheese if you need to hide it!)
    3 minced garlic cloves
    2 15 oz can diced tomatoes
    1 8oz can tomato sauce
    1 tbsp basil leaves (dried)
    1 tsp oregano
    1 tsp salt
    1 tbsp no-calorie sweetener
    1 cup water
    9 dry lagsana noodles (whole wheat)


    Cheese filling:
    1 14oz pkg. lite tofu
    3/4C cottage cheese, 2%
    2 eggs
    2 t basil
    2t italian seasoning
    1/2 C shredded part-skim mozzarella


Directions

Makes 8 pieces

Heat oven to 375

1. Begin to brown turkey on a large saucepan. When turkey is half done stir in onions, peppers, zucchini and garlic and cook until tender. Stir in tomatoes, water and seasonings and simmer 10 min.

2. To make cheese filling, first drain the tofu. Place in a medium bowl and chop/stir with a whisk until it is about the size of the cottage cheese. Stir in all the other filling ingredients EXCEPT MOZZARELLA.

3. Assemble - spray a 9x13 pan with spray oil. Spoon a small amount of tomato sauce on the bottom. Place 3 noodles, then spread 1/2 the cheese over the noodles. Pour 1/3 of the tomato sauce over the cheese. Layer noodles, cheese, sauce, then noodles & finish with all remaining sauce.

4. Cover and bake for 45 minutes. Uncover, sprinkle with cheese and bake 15 more minutes or until cheese is melted and lasagna is tender. Allow to cool 10 minutes before slicing.
