Apple Oatmeal Pancakes

Introduction

I used my Vitamix to grind the oats to a flour.

These pancakes are wonderfully sweet and moist on their own - they do not need syrup. For a nice treat, top the pancakes with apples sauteed in a pan with a little non-stick spray until they are soft, add a little ccinnamon and stir until mixed.

Number of Servings: 8

Ingredients

    1/2 cup whole wheat flour
    1/2 cup rolled oats (old-fashioned oats)
    1/2 cup fat free milk
    1.5 tsp baking powder
    1/4 tsp salt
    3 packets Stevia
    1/2 cup plus 1 TBSP unsweetened applesauce
    1 egg
    1 tsp cinnamon
    1/2 apple diced

Directions

It is not necessary to grind the oats into a flour but I do as I like the consistency of the batter and pancakes.

Add all wet ingredients in blender and mix together. To the wet ingredients, add the dry ingredients an blend to desired consistency.

Heat griddle to 375 degrees (medium). When griddle is hot, pour about 1/4 of batter per pancake. Cook until bubbes appear and edges are puffed. Flip the pancakes and cook until golden.

Makes about 8 pancakes.
