Number of Servings: 5


    1 can diced tomatoes (14.5 oz)
    1 can green chiles (4 oz)
    1 green pepper, diced
    1 yellow onion, chopped
    1 packet taco seasoning
    1 lb boneless chicken breast


Put 1st five ingredients in the slow cooker. Stir to combine. Add chicken. Set temp on the slow cooker based on how much time you have available. For best results, cook on low heat for ~4 hours.

Periodically stir the mixture and start shredding the chicken with two forks. The longer it cooks, the easier it is to shred.

This chicken is great for hard or soft shell tacos, enchiladas, and quesadillas.

Serves 4-6.
