Cream of Lentil soup with Chourico Croutes

Ingredients

    1 Cup dry Lentils (green or brown - your choice)
    1 medium Carrot, Chopped
    1 medium Onion, Chopped
    1 Whole Bay Leaf
    1 Whole Sprig Fresh Thyme
    4 Cups Chicken stock or Water (Chicken stock add more flavour)
    1 Pinch of Salt & Pepper
    1 Squirt of Lemon Juice
    3 Tblsp Olive Oil
    1 small Chouico (Chorizo) Sausage, thinly sliced

Directions

Yields aproximately 8 servings:
Soak the lentil in cold water in refridgerator for 2 hours.
Drain Lentils and put in a pot.
Add the Carrot, Onion, Bay Leaf, thyme and Chicken Stock (or water).
cover and simmer untill tender, about 45 minutes.
Discard the herbs (Bay Leaf & Thyme sprig)
Let the Lentils & vegetables cool somewhat, then puree in a blender.
** Work in two batches to avoid and explosive mess. Remember if you put something that is too hot into a blender it may crack)**
For a very smooth soup, you may strain it, although it is not necessary.
Add salt & pepper to taste along with a squeeze of lemon juice if you wish.
Gently reheat the soup.

Heat the Olive Oil in a small frying pan and saute the Chourico sausage slices untill they curl, Turn. They should be crisp but not burnt.

Serve the Lentil soup into a bowl and garnish with the chourico Sausage Croutes.
