IntroductionWhipped this up for brunch and loved it so I thought I'd plug it in for the calories and to share. I'll definitely be making it again! Whipped this up for brunch and loved it so I thought I'd plug it in for the calories and to share. I'll definitely be making it again!
1 tsp Olive Oil
1/4 cup Onion, chopped
1/4 cup Bell Pepper, chopped (I used Yellow)
1/4 cup Mushrooms, sliced
1/5 cup Spinach, fresh
1/4-1/2 tsp Smoked Paprika
a few dashes of Fresh Ground Black Pepper
4 medium Eggs
2 medium Egg Whites
1/2 oz Feta Cheese, crumbled
2. Toss in onion & bell pepper to sautee
3. Once onion begins to soften, toss in mushrooms, spinach, smoked paprika and ground pepper. Sautee until spinach wilts and cooks through and mushrooms release their juices.
4. Beat together the eggs and egg whites, then pour over the veggies in the pan. Stir occasionally for about 5 minutes.
5. Sprinkle crumbled feta over egg & veggie mixture. Continue stirring/scrambling for about another 5 minutes (or however long depending on how cooked you like your scrambled eggs).
I was looking for a high-protein, decent calorie brunch after a hard workout, so I only calculated this as 2 servings. It could easily make 4 smaller helpings if preferred. I also served it with fresh grapefruit, wheat toast, and veggie sausage patties, but those items are not included in the nutritional info.
