Fennel Soup low carb

Number of Servings: 4

Ingredients

    Fennel, one bulb coarsely chopped including leaves
    Onion, one small
    Olive Oil, 2 Tbs
    Butter, 1 Tbs
    Beef Broth, one can
    Heavy cream, 2 fl oz
    Salt & Pepper to taste
    Herbs (1/4 tsp oregano, sage, tumeric, 3 bay leaves)

Directions

Saute chopped fennel in olive oil until softened and starts to brown. Add chopped onion and butter and continue saute until onion is soft. Add half of beef broth and simmer until fennel is tender (about 20 minutes). Add salt, pepper, and herbs. Put mixture in food processor and puree. Return to pot and add heavy cream and 1/2 cup water. Simmer for an hour. Add water to thin if needed.
