Peanuty Pancakes

Introduction

Used a base pancake recipe to create a kid-friendly, delicious peanut butter flavored pancake. Used a base pancake recipe to create a kid-friendly, delicious peanut butter flavored pancake.
Number of Servings: 9

Ingredients

    1/2 cup whole wheat flour
    1/2 cup peanut flour (Trader Joe's, or Byrd Mill)
    2 tsp baking powder (NOT soda)
    1 tbsp brown sugar
    1/2 tsp salt
    1 egg
    2 tbsp vegetable oil
    1 cup unsweetened almond milk

Directions

Mix dry ingredients (flours, baking powder, salt & sugar) in large bowl. Whisk together egg, oil & milk in a separate bowl. Add wet ingredients to dry ingredients and mix to combine (take care not to over mix).

Pour ladle of batter onto hot griddle or pan coated with cooking spray. Add any add-ins at this point. Flip when edges of pancake turn golden. Continue to cook on other side for 1-2 minutes.

Serve as-is, or with your favorite syrup or pancake topping.

Recipe makes approximately 9 3-4" pancakes. Nutrition information is per pancake.
