Easy Tomato Soup

Introduction

This is the most simple recipe I have ever made for tomato soup, and by far the best! This is the most simple recipe I have ever made for tomato soup, and by far the best!
Number of Servings: 4

Ingredients

    3 pounds tomatoes, peeled and chopped
    1 medium onion, chopped
    2 tbsp. olive oil
    2 tbsp. basil
    1/4 c. heavy cream

Directions

Heat oil in a large stock pan. Add onions and cook until tender but not brown. Add chopped tomato and simmer until tomatoes are covered in juice, about 25 minutes.

Blend tomatoes until smooth (I use a stick blender, but the regular blender works, too). Return to pan and add heavy cream. Serve hot.

This also freezes and reheats very well.
