Atlantic Salmon Burger:
500 grams fresh Atlantic Salmon, minced
Quarter cup freshly chopped dill
Quarted cup freshly chopped corriander
half a lemon juice
half a lime juice
quater lemon zest, finelly chopped
quarter lime zest, finelly chopped
fresh cracke pepper to taste
Olive oil, for cooking only
1 egg white, whisked gently
50 grams breadcrumbs (I made my own with 2 day old homemade bread)
Add the salmon mince and mix through.
Roll into balls, about 3cm diameter.
Roll in whisked egg white and breadcrumbs.
Place into a hot pan with some olive oil and press down to about double size (approx. 6cm diameter)
Cook for 2 minutes and turn only once. Cook for a further 3 minutes and turn off heat.
Makes about 8 at this size.
Serve with a fresh slice of lime.
