Grandmas Stuffed Peppers

Introduction

Using ground pork makes these peppers slightly more lean than their traditional ground beef counterparts. Long grain brown rice gives these peppers a nutty flavor. 1 serving = 1 stuffed pepper. Ingredients

    *14 large bell peppers
    *2 lbs ground pork
    *1 - 28oz can diced tomatoes
    *1 - 28oz can tomato puree
    *3 cups cooked brown rice
    *Salt
    *Pepper
    *Ginger
    *Five Spice

Directions

*Prepare brown rice according to directions on bag

*Cut the tops off of the bell peppers and seed them. Save the tops for later in the recipe.

*Brown the pork - make sure to cook it thoroughly.

*Drain the pork and mix it with the diced tomatoes

*Add salt and pepper (to taste), 2 tsp ginger and 3 tsp five spice.

*Mix the pork mixture with the cooked rice.

*Stuff the peppers with the pork and rice mixture.

*Lightly salt & pepper the tops of the peppers.

*Put a spoon full or two of tomato puree on the top of each pepper.

*Put the "lids" back on the peppers.

*Place the assembled peppers in a baking dish and cover with foil.

*Bake at 350 for 45 minutes, or until the peppers reach their desired tenderness.
