Low Fat Cranberry Orange Drop Scones

Great tasting, low cal and low fat. These scones are great to have around for a quick snack. They make a great "stretch item" for the nutrisystem program also! Great tasting, low cal and low fat. Number of Servings: 12

Ingredients

    1 1/2 Cup White All-Purpose Flour
    1/2 Cup Quaker Instant Oatmeal, Dry
    1/4 Cup brown sugar
    1/4 Cup granulated sugar
    1/2 tsp baking soda
    2 tsp baking powder
    1/4 tsp salt

    2 tbsp butter
    1 tbsp brummels and brown
    1/3 cup cranberries, dried
    1 medium egg
    3/4 cup non-fat milk
    2 oz. frozen orange juice concentrate (thawed)
    1 tsp vanilla

Directions

In a large bowl combine flour, oatmeal, sugars, baking soda, baking powder, and salt. Cut in the butter until it resembles small peas. Add cranberries to dry ingredients and mix. In small bowl combine the egg, milk, 2 oz. frozen orange juice concentrate(thawed), and vanilla. Whisk until combined well and add to the dry ingredients. Combine all ingredients and then drop by heaping tablespoon onto a cookie sheet lined with parchment paper.
Makes 12 small scones.
Bake for 12-14 minutes @375deg.
