3 Tbsp. olive oil
Green onions or 1 small yellow onion
1 large or 2 small jalapeno peppers
3 cloves of garlic
1 tsp. of cumin
Juice from half of a lemon
1/4 cup of almonds
1 bunch of fresh cilantro
1-2 lbs. of chicken or shrimp
Step 1 - Cut chicken into strips, cut off any excess fat
Step 2 - Place the rest of the ingredient into a food processor. Blend until smooth.
Step 3 - Cover chicken with almond pesto mixture.
Step 4 - Bake at 350 for 20-25 minutes. Should have a moist texture. Garnish with sliced avocado and grape tomatoes.
