Bobbi's Mixed Veggie Farro Salad

Introduction

a quick salad served warm or cold a quick salad served warm or cold
Number of Servings: 6

Ingredients

    Farro, 1 cup
    Cucumber (with peel), 2 cups thinly sliced
    Tomato, grape -cut in half
    Cheddar Cheese(or any other cheese u prefer)-small dice
    Plain Rice Vinegar, 8 tbsp
    *Extra Virgin Olive Oil, 4 tbsp
    *Lemon Juice, 0.25 cup
    low sodium chicken broth, 2 cup
    Water - 1.5 cup
    Basil, 2 tbsp-you can use fresh or dried
    Salt, 1 tsp
    Pepper, black, 1 tbsp

Directions

In a pan mix the Farro,chicken stock, and water.Bring to a boil,once boiling turn to low,cover, let simmer 20 minutes..

While the farro is cooking, measure out the olive oil,vinegar- of your choice, lemon juice,basil,salt,pepper..( I just mix it all right in a measuring cup for easy pouring) set aside

In the bowl you are going to mix the salad in,put the cucumber,tomatoes and cheese, set aside..

When the farro is cooked it will have the texture of al dente pasta..Drain, put in salad bowl.. While warm pour 3/4 of the dressing over the salad..mix till combined

Store covered in the fridge till you are ready to serve.When ready to serve if needed pour the rest of the dressing over..

NOTE: salad can be served warm or cold.. you can switch up the vegetables and cheese to any you like!
