Chicken/Turkey Meatloaf with Cranberries

Number of Servings: 8

Ingredients

    2 Pounds or 900 grams Extra Lean Chicken or Turkey.
    2 Slices Whole Wheat Bread
    1/2 cup or 125 ml 1% milk
    1/2 small onion grated
    1/4 dried cranberries finely chopped
    1 egg
    1 Tablespoon Dijon Mustard
    2 teaspoons dried parsley
    1 teaspoon chili powder
    1/2 teaspoon salt
    pinch pepper
    pinch crumbled sage

Directions

Preheat oven to 350.
Soak bread in milk until soft (approximately 5 minutes)
Add seasonings, onion, cranberries and egg.
Mix well and then add meat and mix well.
(I use my hands)
Put into loaf pan and bake for 90 minutes.

Makes 8 Servings

I clean and bake potatoes at the same time, I love baked potatoes and it makes good use of the oven heat.

The cooking time gives me the time to clean up the prep mess long before dinner is ready.
