Pineapple Ice

Introduction

Number of Servings: 8

Ingredients

    1 20-oz can crushed pineapple (with juice)
    1/2 cup sugar
    2 cups buttermilk or one 16 oz carton plain fat free yogurt (used yogurt for nutritional information)
    1/2 tsp vanilla
    Fresh pineapple (optional)
    Mint leaves (optional)

Directions

* In a blender container or food processor bowl place the undrained pineapple. Cover and blend or process till pureed. Transfer the pureed pineapple to a mixing bowl; stir in sugar. Let the mixture stand about 10 minutes or till the sugar dissolves, stirring occasionally. Stir in the buttermilk or yogurt and vanilla.
* Transfer pineapple mixture to a 1 1/2 qt freezer container. Cover and freeze overnight or till firm. Let stand at room temperature about 30 minutes before serving. Scoop into small dessert bowls. If desired, garnish with fresh pineapple or mint leaves (not included in nutritional information)

Makes about 8 1/2 cup servings
