Peach and Champagne Pork Chops

Introduction

This dish is a little heavier than I'd like on the pork chops, but provides moist, delicious pork and some of your daily fruit! This dish is a little heavier than I'd like on the pork chops, but provides moist, delicious pork and some of your daily fruit!
Number of Servings: 4

Ingredients

    12 oz pork chops (boneless tenderloin is best)
    2 Tbsp Olive Oil
    1/2 Cup Canned Peaches, rinse and diced
    1 1/2 Tbsp Pineapple Jam
    4 oz Applesauce, cinnamon or plain
    3 Tbsp Onion, chopped
    1-2 Cloves Garlic, minced
    12 oz Champagne (or white wine of your choice)
    Paprika, Cumin, Salt and Pepper to taste

Directions

Rub pork chops with Paprika, Cumin, Salt, and Pepper. Heat a frying pan over medium high heat, add olive oil, and sear the pork chops to give them color. Transfer pork chops to an ungreased baking dish.

Mix the peaches, pineapple jam, apple sauce, onion, and garlic in a bowl. Top the porkchops with all of the fruit mixture, then add champagne to the bottom of the pan. Add water until almost to the top of the pork chops, then cover with foil and bake in an oven preheated to 375 degrees Fahrenheit. Bake for 40-60 minutes, or until pork chops are cooked through. Serve with a big spoonful of the fruit mixture.

Go well with potatoes or rice, and your favorite vegetable!
