califlower vegetable soup

Number of Servings: 6

Ingredients

    2 tbs olive oil
    1 cup chopped onions
    1-1/2 minced garlic
    6 cups cauliflower chopped, about 1 large head
    1/2 cups chopped carrots
    1/2 cup chopped celery
    2 cans (14 oz chicken or vegetable broth
    1 can tomatoes (14 oz)
    1/2 tsp cumin
    top with feta cheese if desired, not added in calorie count

Directions

cook onions, garlic and and celery until onions are translucent.
add all ingredients, including onion mixture to pot, simmer until cauliflower done. Salt and pepper to taste
