Slowcooker Potroast Dinner Oriental

Introduction

This is a quick and easy weeknight supper. Put in the crock pot before work and come home to dinner! I serve it with instant brown rice and broccoli on the side (INCLUDED in recipe calculations). The recipe calculations are for 4 oz servings but you can double that and still not have too many calories for dinner! This is a quick and easy weeknight supper. Ingredients

    4 lb beef bottom round roast (pot roast)
    1/2 cup soy sauce
    1/2 tsp ground ginger
    1 cup water
    1/2 cup crushed pineapple
    2 med onions chopped
    8 cups instant brown rice, cooked to serve on side
    8 cups chopped broccoli, steamed to serve on side

Directions

Brown roast on all sides and place in crockpot. Cover with chopped onion. Combine soy sauce, ginger and water and pour over all. Drop crushed pineapple over top and sides. Cook on low 8-10 hours. Yield 18 servings 4 oz each. Serve with 1/2 cup each chopped broccoli and brown rice (included in the recipe calculation). In my house, the boys eat way more than 4 oz of beef so I would say this roast actually makes 6-8 servings. I have included the recommended serving size of 4 oz beef in the recipe calculation for this dinner
