Onion Soup Quick & Easy Version

Introduction

This makes a full vegetable serving per person. This makes a full vegetable serving per person.
Number of Servings: 8

Ingredients

    4 medium or 3 large onions
    1/2 stick (4 tbsp) butter (don't use less)
    3 tablespoon flour
    6 cups broth - beef is best but chicken or vegetable will do
    3 cups water
    Salt and pepper to taste

    Add (not calculated in nutrition facts):
    Grated Parmesan or Swiss cheese, Bread

Directions

Cut up the onions. Heat the butter over medium heat, then add the onions. Stir and cook over medium to med-high heat until they are slightly caramelized and soft - about 10-15 minutes. Brown edges are fine (great, actually), but void burning them.

Add the flour and stir until the onions are coated. Add the broth and wine, and bring to a boil. Lower the heat to a simmer and cover the soup. Let it simmer for another 10 minutes or so, lifting the lid at the end to let it reduce a little. Taste and season.

Serve with fresh grated cheese and good bread.
