Banana Blueberry Bread

Introduction

Banana Blueberry bread is something I made up to use up the last of the blueberries. Banana Blueberry bread is something I made up to use up the last of the blueberries.

Ingredients

    8 tbsp I Can't Believe It's Not Butter - Light
    3/4 cup Brown Sugar
    2 large Eggs
    2 large Bananas (ripe)
    2 cups Flour
    1 tsp Baking Soda
    1/4 tsp salt
    1 3/4 cup Blueberries

Directions

Preheat oven to 350 degrees F

In a large bowl, combine flour, baking soda and salt.

In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir all but 1/4 of the flour mixture mixture into the banana mixture; stir just to moisten. Take but blueberries and dredge them through the last of the flour mixture and then add it all to the banana mixture and fold in.

Pour batter into prepared loaf pan or bunt pan. For a loaf pan cook for about 60 minutes. For a bunt pan it'll only take about 45.
