Introduction

Crock pot recipe for stew with veggies & pork! Crock pot recipe for stew with veggies & pork!
Number of Servings: 6

Ingredients

    2 lb. pork tenderloin, cubed & trimmed of fat
    16 oz. chicken broth
    2 bags frozen mixed veggies
    1 lg. onion chopped
    2 tsp minced garlic
    1 T. Extra Virgin Olive Oil
    salt & pepper to taste

Directions

Makes 6 two-cup servings.

1. Saute onions & garlic in a pan with olive oil (no oil needed; you can use water to keep it from sticking to the pan if you prefer).
2. Add all ingredients to a crockpot and cook on LOW for 8 hours. (You may need to add a cup of water if the broth looks low, to keep pork from drying out.)
