great breakfast treat that uses left overs up. great breakfast treat that uses left overs up.

Ingredients

    2 tsp olive oil**
    1 baked potato cubed
    1 1/4inch slice of onion chopped
    1/2 bell pepper chopped

Directions

this recipe serves 1 person or 2 toddlers.
Chop (cube) all of the vegetables while olive oil is warming in a pan. Once pan is heated add all ingredients in stirring occasionally, takes about 10 minutes to get crispy.

**you can replace the olive oil with a non stick spray, but the potatoes wont crisp up the same.
