Tom Kha the Easy Way

Introduction

I love the Thai soup Tom Kha. Sometimes I buy it canned and slim it down a little. Then I have the option of adding chicken, mushrooms, or cilantro if I have them around. It satisfies my craving without having to go out to eat! I love the Thai soup Tom Kha. Sometimes I buy it canned and slim it down a little. Then I have the option of adding chicken, mushrooms, or cilantro if I have them around. It satisfies my craving without having to go out to eat!
Number of Servings: 5

Ingredients

    Thai Kitchen Coconut Ginger Soup, 1 can
    Light Coconut Milk, 1 can
    Chicken Broth, lowfat, 1 can
    5 Fresh Mushrooms
    Fresh Cilantro

Directions

Put all of the canned ingredients in a pot and heat over medium heat stirring occassionaly. While the soup is heating slice mushrooms and pluck cilantro leaves from the stems. When soup is heated add equal amounts of mushrooms, cilantro, and broth to each bowl. Makes 5 servings, 1 cup each.

Note: We eat the corn and mushrooms that come from the Thai Kitchen can but we dont eat the pepper, lemongrass, ginger etc.
