angie's twice baked potatoes

Ingredients

    1 TBSP PARSLEY FLAKES
    2 tsp garlic powder
    Baked Potato , 4 potato (2-1/3" x 4-3/4")
    daisy light sour cream, 4 tbsp
    kraft 2% milk sharp cheddar, 1 cup
    land o frost canadian bacon, 4 oz
    mozarella, part skin 1 cup


Directions

bake potatoes as usual for 45 minutes to an hour
while potatoes are baking dice the canadian bacon very small and fry in skillet with some pam
cut in half, scoop out inside leaving about 1/4 inch of white on skin to hold potato together
mix potato insides, cheese, and canadian bacon into mixing bowl, add pepper, garlic, parsley flakes,
scoop mixture back into potato skins and bake again until cheese melts
top with sour cream and serve.

  • Wow---those potatoes were delicious! I didn't have Canadian bacon, so I used pieces of bacon. I made more than the recipe called for---lunch tomorrow! Thanks for the recipe---it's a keeper. - 1/28/10

  • I substituted a bit and they were still good. Used fresh parsley, fresh garlic. cottage cheese instead of sour cream, and "ready cooked bacon" My cheeses were same as recipe though.!! Very good! - 9/1/09

  • i didnt have any of the cheeses and i mixed in yogurt instead of sour cream into the mixture! but it still turned out GREAT! YUM and to think its healthy and low cal!!!:) thanks ANGIE!:) - 3/18/08
