Asian Cole Slaw

Introduction

I serve this as a side dish to tuna burgers, but it is a great base for a main dish salad if you add some extras. I serve this as a side dish to tuna burgers, but it is a great base for a main dish salad if you add some extras.
Number of Servings: 5

Ingredients

    1/4 cup sugar/sodium free rice vinegar
    2 Tbs. low-sodium soy sauce
    2 Tbs. sesame oil
    1/4 tsp. crushed red pepper flakes
    1/4 cup sliced green onion (scallion)
    1 pkg. coleslaw mix
    1 Tbs. parsley
    3 tsp. sesame seeds, toasted

Directions

In a large bowl, whisk together rice vinegar, soy sauce, sesame oil, crushed red pepper and green onion. Add coleslaw mix and toss to coat. Sprinkle parsley and sesame seeds on top and toss gently to mix in.

Makes 5 (1-1/4 cup) servings

Note: I like to add water chestnuts, mandarin oranges and chicken to this for a main dish-yum!
