Turkey Sausage Breakfast Casserole

Ingredients

    4 cups frozen shredded hash brown potatoes
    1 lb. turkey breakfast sausage, browned and drained
    1 green bell pepper, diced
    1 onion, diced
    2 cups reduced fat cheddar cheese
    1 cup reduced-fat biscuit/baking mix
    1 egg
    3 eggs worth of egg whites
    3 cups fat free milk
    1/2 tbsp oil

Directions

Sautee onion and bell pepper in olive oil until soft. In a large bowl, mix together the hash browns, sausage, pepper, onion and cheese. Pour into a 13x9 pan sprayed with Pam. In a bowl, whisk together the biscuit mix, egg, egg whites and milk. Add salt and pepper to taste. Pour liquid mixture into the baking dish. Cover and refrigerate overnight. Remove 30 minutes before baking. Bake at 375 for 30-35 minutes or until set in the middle.
