Cauliflower Vegetable Soup

Ingredients

    1 Tbsp Extra Virgin Olive Oil
    1/2 med-large onion diced
    1 carrot diced
    2 cloves garlic chopped
    4 cups water
    3 bouillon cubes
    1/2 head of cauliflower cut up
    2 medium red potatos diced
    1/2 cup canned diced tomatoes or more according to preference
    dry italian seasoning
    fresh black pepper



Directions

You could also call this "kitchen sink" veggie soup because it's a great way to use up whatever's taking up space in your vegetable drawer. Makes approximately 4 bowls of soup.

Saute onion, carrot, and garlic in olive oil. Add water and bouillon cubes, then diced cauliflower and potatos. Bring just to boil then turn down to low-medium low heat. Add tomatoes and dry italian seasoning. Simmer until potatos and cauliflower are tender. Top with fresh black pepper.
