Homemade Potatoe Soup

For a tasty and hardy twist, try this full of flavor lite on the cal soup. For a tasty and hardy twist, try this full of flavor lite on the cal soup.
Number of Servings: 12


    6-8 med raw potatoes
    6-8 c. water
    1c raw onion
    1lb velveeta cheese (cut into 1/2 - 1in pcs)
    1c evaporated milk
    1 can rotel (for spicy)
    Basil (dried)
    cayenne pepper
    black pepper
    garlic powder


Dice potatoes into 1/2 to 1in pcs. Put in water (I sometime for flavor add a bouillon cube or chicken stock as some of the water). Add in onion and all spices.
Cook till potatoes are soft. drain most of the water into seperate bowl (you may have to add some later).
Add evaporated milk, rotel, and velveeta (you can premelt cheese if you wish in the milk and rotel).
Once you get to consistancy of your liking, using a hand blender, puree to your liking.
