This yummy meat loaf is lower in fat, salt and lower in cholesterol. Lighter than a traditional meat loaf and wonderful with a salad. Top with your choice of tomato sauce or gravy. Ingredients

1 1/2 pounds lean ground beef
1 cup no salt tomato juice or no salt tomato sauce
3/4 cup Quaker oats (quick or old fashioned, uncooked)
2 egg whites, slightly beaten
1/4 cup chopped onion
1/4 tsp black pepper
1 tsp chopped fresh parsley
Directions
Serves 8
Heat oven to 350 degrees. Combine all ingredients; mix lightly but thoroughly. Press into a 8 X 4 inch loaf pan. Back 1 hour or until meat is no longer pink and juices run clear. Drain; Let stand 5 minutes before serving in slices. Top with tomato sauce or gravy (not calculated).
