Pineapple Chicken

Introduction

This dish is really very good and low in fat. The sweetness of the pineapple makes this a wonderful dish. Add some white or brown rice to give it an Asian feel. Number of Servings: 8

Ingredients

    2 tablespoons acceptable margarine
    2 tablespoons olive oil
    1 cup unbleached flour
    1/2 teaspoon cinnamon
    1/2 teaspoon ginger
    1/4 teaspoon ground pepper
    8 skinned chicken breast halves
    1 can (20 oz) pineapple chunks in heavy syrup
    1/2 cup sliced green peppers or 1/8 or each orange, yellow and green Peppers mix
    1 chopped onion
    1 sliced carrot
    1 tablespoon brown sugar
    1/4 cup of no salt chicken broth

Directions

Preheat oven to 425 degrees F.

In a large baking pan, melt margarine with oil in the oven. Remove pan.

Combine flour, salt, cinnamon, ginger and pepper into a plastic bag.

Piece by piece, coat chicken by shaking it in the bag with the seasoned flour.

Arrange floured chicken in baking pan in one layer. Bake at 425 degrees F for 20 minutes. Turn chicken.

Combine pineapple, green, orange and yellow pepper, onion and carrot, brown sugar and chick broth. Pour over chicken.

Lower heat to 375 degrees F and bake until chicken is golden brown and sauce is thick (about 45 minutes).

You may want to serve over 1/2 cup white or brown rice per serving. Add rice calories no included in calculation (see rice box panel).
