Dijon Chicken Smothered in Mushrooms

Introduction

The mustard-mushroom sauce is yummy, but mild. My family likes it simple, but you can change it up by adding different seasonings/herbs to your taste. I serve with brown rice and fresh veggies on the side. The mustard-mushroom sauce is yummy, but mild. Ingredients

    4 boneless, skinless chicken breasts (about 1 lb)
    1/4 cup flour
    1/2 tsp. salt
    1/4 tsp. black pepper
    2 Tbs. olive oil
    1/2 cup chicken broth
    1-1/2 Tbs. dijon mustard
    1 cup fresh mushrooms, sliced
    Chopped fresh thyme, if desired

Directions

Place chicken breasts between 2 sheets of waxed paper. Flatten chicken to 1/4-inch thickness with meat mallet or rolling pin. In a shallow dish, mix together flour, salt and pepper. Heat oil in a 12-in nonstick skillet over med-high heat. Coat both sides of chicken with flour mixture. Cook 6-8 minutes, turning once, until chicken is no longer pink. Remove from pan and keep warm. Sautee mushrooms in pan until slightly cooked (add a little of the broth if needed). Add chicken broth to pan and heat to boiling. Stir in mustard. Cook 2-3 min, stirring frequently, until slightly thickened. Spoon sauce over chicken. Sprinkle with thyme, if desired.

Makes 4 servings

Note: The original recipe called for a 4-1/2 oz jar of sliced mushrooms, drained. If you use the jarred mushrooms, add the broth to the pan after removing chicken, bring to boiling. Then stir in mustard and mushrooms together. I found that the mushrooms did not get cooked enough for our taste if I didn't sautee them a bit first.
