Barbequed Potato Kugel

Ingredients

    2 large eggs
    1 Tbsp. smoked paprika
    2 tsps light brown sugar
    2 tsps fine sea salt
    1 tsp. baking powder
    1/2 tsp. finely ground black pepper
    1/4 tsp. onion powder
    2 1/2 lbs. Yukon Gold potatoes
    1 medium onion peeled and cut in thirds
    1/3 cup canola oil

Directions

Place a 9 x 9 inch baking dish in the oven. Turn the oven on and set to 375 F, allowing pan to heat as oven come to temperature.
In a medium bowl whisk the eggs, paprika, brown sugar, salt, baking powder, pepper and onion powder. Make sure eggs are a little bubbly. Set aside.
Peel all the potatoes. Cut each into quarters. Take one-third of the potatoes and one-third of the onion and place in a food processor fitted with a metal "S" blade. Puree until smooth. Empty into a large bowl and repeat 2 more times until all the potato and onion have been pureed.
Add the egg mixture to the potatoes and mix well.
Carefully remove the baking dish from the oven and facing the pan away from you, pour the oil into the pan. Transfer the potato mixture into the pan. Use a spoon to scoop up some of the oil that comes up from the sides and drizzle it over the potatoes.
Bake, uncovered, for 1 hour, 30 minutes. Serve hot and within 2 hrs. of baking.
