Bacon & Chipotle Potato Salad

Introduction

Ingredients

    20 oz Baby Red Potatoes
    3/4 cup Frozen Peas, thawed
    1/2 cup red onion, chopped
    8 TBSP Fat Free Sour Cream
    8 TBSP Hellman's Low Fat Mayonnaise
    3 TBSP Chipotle sauce
    1/2 tsp Garlic Puree
    4 TBSP Hormel - Real Bacon Pieces

Directions

Cube potatoes and place potatoes in a large saucepan and cover with water. Bring to a boil and cook 8-10 minutes or until potatoes are tender (but no mushy). Drain and cool completely.
Meanwhile, in a small bowl, combine sour cream, mayonnaise, Chipotle Sauce, and garlic; mix well.
Place potatoes in a large bowl with bacon, onion, and peas. Add dressing and gently toss to coat.
Cover and refrigerate.
