You can omit the extra mustard & avocado for a lower cal lunch or snack.

I also like to at least triple the recipe for easy lunch prep during the week.

Ingredients

    2 hard cook egg whites, yolks discarded
    2 Tb. finely chopped red pepper
    1 Tb. finely chopped GREEN onion
    1 Tb. sweet pickle relish
    2 tsp. Dijon mustard, divided
    Dash tumeric
    .25 avocado
    2 slice Ezekiel Sprouted Bread

Directions

Mash Eggs with fork. Mix in remaining ingredients. Spread avocado on one slice and 1 tsp of Dijon on other slice. You can omit 2nd tsp of dijon as spread and omit avocado and garnish with sprouts, spinach, or even tomatoes to taste.
