Introduction

Nothing exotic here- just a good reason to use up those very ripe
bananas. I like warm banana bread with a cold glass of milk on a chilly winter afternoon.You'll love the nutty cinnamon-y crust - yum!

Ingredients

    1 cup brown sugar, packed
    1 stick butter, softened
    2 large eggs, beaten
    2 large bananas, ripened and smashed
    1/4 cup buttermilk
    2 cups all-purpose flour
    1/2 tsp salt
    1 tsp baking soda
    1/2 cup pecans, chopped
    1/4 cup granulated sugar
    1 tsp cinnamon

Directions

1. Preheat oven to 350. Lightly grease a 9-inch loaf pan.

2. In large mixing bowl, cream brown sugar and butter. Add eggs and bananas and blend well. Add buttermilk and stir again.

3. In a separate bowl, sift together flour, salt and baking soda. Add dry ingredients to wet ingredients and blend well.

4. Stir pecans into the batter and pour batter into the loaf pan. Bake for 45 minutes to a hour.

5. While Banana Bread is bakin, prepare cinnamon-sugar topping by mixing cinnamon and granulated sugar. Remove Banana Bread from oven and sprinkle with cinnamon sugar while still warm. Let cool for at least 15 minutes before serving.

makes 8 slices but i cut it in half so it really 16 (half slices)
