Introduction

Ingredients

    3 Tablespoons olive oil
    1 head cauliflower, boiled and mashed
    2 cups leeks, coursely chopped (white and pale green parts)
    1/4 medium onion
    1 large garlic clove
    3 tablespoons bread crumbs
    2 large eggs
    1/2 cup chopped parsley, fresh (or use 1 tablespoon dried)
    1/2 cup chopped dill (or 1 tablespoon dried)
    1/4 cup pine nuts
    1 oz. Parmesan cheese, shredded
    3/4 teaspoon salt
    1/4 teaspoon fresh ground pepper

Directions

Mash cooked cauliflower in medium bowl. Saute leeks, onion and garlic 5 minutes. Add to cauliflower. Scramble eggs. Add to cauliflower mixture. Add bread crumbs, 1 tablespoon fresh parsley (1 teaspoon dried), 1 tablespoon fresh dill (1 teaspoon dried), parmesan cheese, salt and pepper. Mix together. Brush 8 x 8 pan with olive oil. Spread cauliflower mixture into pan. In small bowl, mix 1 tablespoon olive oil, parsley, dill and pine nuts. Sprinkle over cauliflower mixture. Bake 30 min. at 350.
