2 cups cook diced chicken. I used .82lb chicken tenderlions
1/2 od instant rice.. I choose minute brown rice
1 can of diced tomatos.
1 can of healthy request cream of chicken soup
1 can of green giant mexicorn- corn with red and green pepper
1 teaspoon of taco seasoning. I used a less sodium kind
1 and 1/2 cup of reduced fat cheddar cheese
1 cup of tortilla chips
Cook the chicken cut it up put it in a mixing bowl. add rice, soup, tomatos drained, and corn undrained. 1 cup of cheese and taco seasoning, mix well. Pour into a two quart baking dish. Bake in oven for 1 hour. pull out top with chips and 1/2 cup of cheese bake 10 minutes more.
