Quinoa Pilaf

Number of Servings: 8

Ingredients

    Green Onion, fresh, .25 cup
    Carrots, raw, .25 cup, chopped
    Red Bell Pepper (thinly sliced), .25 cup
    Ancient Harvest Traditional Whole Grain Quinoa, 1 cup
    1 tsp minced garlic

Directions

Fill a sauce pan with 2 cups of water and 1 cup of quinoa. Bring to a boil. Reduce to a simmer and cook until water is absorbed (about 15 minutes).

While the quinoa is cooking, saute vegetables and garlic with oil until translucent.

Add to quinoa and mix to combine. Makes approximately 8 1/2 cup servings.
