Corn Flake Chicken

Ingredients

6 chicken breasts
1-3C Corn Flakes
1.5 TSP Season Salt
1 egg - or 3 egg whites
1 TBLS water
Directions
In a plastic zip lock bag, add 1-3 cups of cerial and the seaonsed Salt. With a rolling pin or food processor grind up the corn flakes till it gets to the consistancy you want for a breading.
In a small bowl, crack the egg and beat. Add the water to the bowl and stir.
Fill another small bowl with the corn flakes (You won't use the entire bag worth)
coat the chicken with the egg mixture and then dredge into the corn flakes.
Here's my secret tip for making Any chicken breast extra moist...yes white meat chicken, moist!
Place chicken on a broiler pan and bake for 20-25 minutes at 350 degrees.
Why a broiler pan? It creates a convection stream over the chicken and any fat that drips drips into the pan below and away from your chicken. As the fat cooks it permiates the chicken with juices but leaves the fat behind. For easy cleaning put foil at the bottom of the broiler pan.
