Introduction

This is the recipe from Spark from my nutrition meal, with my changes. Soy milk instead of regular milk, different type of beans, etc. This is the recipe from Spark from my nutrition meal, with my changes. Soy milk instead of regular milk, different type of beans, etc.

Ingredients

    1 red potato
    1 cup frozen broccoli Flourets (if using fresh instead of frozen it would be 4 spears)
    1 cup white kidney beans
    1 cup Trader Joe's Low Sodium vegetable broth
    1 cup Soy milk unsweetened
    2 tbsp of parmesan cheese.
    pepper or salt to taste if desired

Directions

this makes one huge bowl of soup (main dish for me) or 2 servings if pairing up with a salad.

Place cube potato, broth and milk in pot. Heat until potatoes are cooked, then puree (blender). If you want to thin soup, use water. Return to pot, add beans, cheese, and broccoli. Heat, stirring well and serve
